Overnight Oats

 

INTRODUCTION

This is quick easy & nutritious!
It can be made as one big portion to share or as individual pots to take with you to work or school.

The organic oats contain beneficial fibre that supports our gut microbiome & our cardiovascular health

The combination of the protein & good fats in the almond butter combined with the fibre in the apple (pectin) provides the perfect fuel to balance your blood sugars & keep you full until lunch!

Top as you wish & mix it up with other options i.e. cacao nibs, kiwi, orange etc...

 

INGREDIENTS - SALAD

  • 4 Tbsp of Porridge Oats
  • 1 Tbsp of Chia seeds
  • 1 Grated organic apple
  • ½ cup of fresh blueberries
  • ½ cup of fresh blackberries
  • 150-200ml of Oat Milk
  • Optional Toppings: 1 tsp almond butter, desiccated coconut, goji berries

METHOD

  • 1. Combine all of the ingredients in a bowl & mix well.
  • 2. It should be loose enough & not too dry so adjust accordingly if needed. The chia seeds will expand & absorb the moisture – better to use more liquid than it be too dry!
  • 3. Either spoon into individual small glass jars, OR 1 large jar for the family - seal & refrigerate for a couple of hours or overnight. I like to use killner jars with the flip-top rubber seal lid
  • 4. When ready to consume, top as per above suggestions. Enjoy for breakfast or as a snack. This will keep for up to 4 days in the fridge.
